GRAPES USED, AGE AND CONTRADA:

From indigenous grapes grown in former Sillitti area since 2008.

TYPE OF CONDUCT:

VINIFICATION:

The grapes are harvested in small perforated crates about 14 kg, they have been kept in cold storage at 3 ° C for 24-48 hours. The grapes have been pressing with pneumatic press, after the stripping. After a quick cold clarification, ilmosto was racked and fermented at a controlled temperature with selected yeasts in stainless steel.

AGING:

Six months after the harvest, the wine was re-assembled and started to re-fermentation in pressurized tanks for the second fermentation, acquiring softness and fruity notes. After the last stages of stabilization has been bottled and stored at a controlled temperature, until the time of distribution.
